Ingredients
Wet Ingredients
- ¾ cup Biscoff cookie butter
- ½ cup vegetable shortening
- 1 cup packed light brown sugar
- 1 large egg
- 3 tablespoons milk
Dry Ingredients
- 1¾ cups all-purpose flour
- ¾ teaspoon baking soda
- 1 teaspoon salt
Instructions
- Preheat Oven: Heat your oven to 375°F (190°C). Line baking sheets with parchment paper to prevent sticking and make cleanup easier.
- Mix Wet Ingredients: In a large mixing bowl, combine the Biscoff cookie butter, vegetable shortening, and light brown sugar. Beat these ingredients together until the mixture is light and fluffy, ensuring a creamy base for your cookies.
- Add Egg and Milk: Add the large egg and 3 tablespoons of milk to the mixture. Mix thoroughly until all ingredients are well combined and smooth.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. This ensures even distribution of leavening and seasoning throughout the dough.
- Incorporate Dry Ingredients: Add half of the dry ingredients to the wet mixture and mix well. Then add the remaining dry ingredients and mix just until combined to avoid overworking the dough.
- Form Dough Balls: Scoop about 2 tablespoons of dough and roll each portion into a ball. Place the balls on the prepared baking sheets spaced about 6 inches apart to allow for spreading.
- Press with Fork: Use a fork to gently press each dough ball in a crisscross pattern. This creates the classic cookie design and helps the cookies bake evenly.
- Bake: Bake in the preheated oven for 14 to 15 minutes, until the edges turn lightly golden, indicating they are perfectly baked with a soft center.
- Cool: Let the cookies cool on the baking sheet for 3 minutes, then transfer them to a wire rack to cool completely, ensuring they set properly and retain their texture.
Notes
- Ensure not to overmix once the flour is added to avoid tough cookies.
- The spacing between dough balls is important as the cookies will spread during baking.
- If you prefer crispier cookies, increase baking time by 1-2 minutes but watch carefully to avoid burning.
- Storage: Keep cookies in an airtight container at room temperature for up to 5 days.
- For a dairy-free version, substitute milk with almond or oat milk and ensure shortening is vegan-friendly.
