Instructions

  1. Heat the skillet: Place a skillet over medium heat and add a drizzle of olive oil to warm up.
  2. Sauté onions and peppers: Add the diced onions and red bell peppers to the skillet and cook for 7-8 minutes until softened and fragrant.
  3. Add beans, spices, and spinach: Stir in the drained black beans, salt, black pepper, garlic powder, paprika, smoked paprika, and spinach. Cook for another 2 minutes until the spinach wilts.

  5. Assemble burritos: Lay a tortilla flat and spoon the egg and bean mixture into the center. Fold in the sides and roll from the bottom tightly to form a burrito.
