- 6 large tortillas
Filling
- 8 eggs, whisked
- 1 can black beans (15 oz, drained and rinsed)
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 cups spinach
- 1 cup shredded cheese (mozzarella recommended)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp smoked paprika
- Olive oil, for sautéing
Instructions
- Heat the skillet: Place a skillet over medium heat and add a drizzle of olive oil to warm up.
- Sauté onions and peppers: Add the diced onions and red bell peppers to the skillet and cook for 7-8 minutes until softened and fragrant.
- Add beans, spices, and spinach: Stir in the drained black beans, salt, black pepper, garlic powder, paprika, smoked paprika, and spinach. Cook for another 2 minutes until the spinach wilts.
- Cook the eggs: Pour the whisked eggs into the skillet and reduce heat to low. Stir gently every minute for 5-6 minutes until eggs fully cook. Then fold in shredded cheese until melted and well combined.
- Assemble burritos: Lay a tortilla flat and spoon the egg and bean mixture into the center. Fold in the sides and roll from the bottom tightly to form a burrito.
- Store: Wrap each burrito individually in parchment paper or foil. Place in an airtight container or sealed bag. Freeze for up to 3 months or refrigerate for up to 5 days.
- Reheat from frozen: Thaw overnight in the refrigerator or microwave for 90 seconds. To crisp the tortilla, air fry, bake at 350°F or grill on a pan for 5-7 minutes until heated through and slightly crisp.
- Reheat from fridge: Grill on a heated skillet with cooking spray or bake/air-fry at 350°F for 5-7 minutes until hot and crispy.
Notes
- Use any cheese of choice or make it dairy-free with vegan cheese.
- For extra spice, add a sprinkle of chili flakes or hot sauce.
- Customize fillings by adding avocado, salsa, or sour cream when serving.
