  • Total Time: 40 minutes
  • Yield: 8-10 tacos

Ingredients

Sweet Potatoes

  • 2 medium sweet potatoes – cut into small pieces
  • 2 tablespoons extra virgin olive oil
  • 2–3 tablespoons taco seasoning (divided)

Black Beans

  • 1 cup canned black beans – drained and rinsed
  • 1 teaspoon extra virgin olive oil
  • Salt and pepper – to taste

Tortillas & Cheese

  • 8–10 yellow corn tortillas – 6-inch size
  • Olive oil spray, for air fryer basket and tortillas
  • 1 cup shredded Mexican cheese

For Serving

  • Diced avocado
  • Chopped cilantro
  • Lime wedges

Instructions

  1. Prepare the Sweet Potatoes: In a medium bowl, toss the diced sweet potatoes with 2 tablespoons of olive oil and 1 tablespoon of taco seasoning until evenly coated to infuse flavor.
  2. Air Fry the Sweet Potatoes: Preheat the air fryer to 400°F. Spray the air fryer basket with olive oil spray, arrange the sweet potatoes in an even layer, and air fry for 15-18 minutes until crispy on the outside and tender inside, shaking the basket halfway through for even cooking.
  3. Cook the Black Beans: Heat a skillet over medium heat and add a light drizzle of olive oil. Add the drained black beans, season with the remaining taco seasoning, salt, and pepper, and cook while stirring for several minutes until heated through and fragrant.
  4. Combine Beans and Potatoes: Transfer the cooked sweet potatoes and black beans back into the same bowl used for seasoning to mix gently, combining the flavors evenly.
  5. Prepare the Tortillas: Preheat the oven to 425°F. Place the corn tortillas on a baking sheet and brush or spray both sides lightly with olive oil. Bake for 5-6 minutes until soft but still pliable.
  6. Assemble the Tacos: Remove the tortillas from the oven and sprinkle a layer of shredded Mexican cheese onto each tortilla. Spoon the sweet potato and black bean mixture onto one side of the tortilla, then top with more cheese, taking care not to overfill.
  7. Bake the Tacos: Carefully fold each tortilla over the filling and place them on the baking sheet. Bake for about 5-6 minutes on each side until the cheese is melted and the tortillas are golden and slightly crispy.
  8. Serve: Serve the tacos warm, topped with diced avocado, chopped cilantro, and lime wedges for added freshness and brightness.

Notes

  • Air fryer temperatures and times may vary; adjust as needed to avoid burning the sweet potatoes.
  • Use fresh taco seasoning or a store-bought blend depending on preference.
  • Vegetarian and gluten-free as the tortillas are corn-based; verify cheese for dietary needs if necessary.
  • Feel free to add additional toppings such as sour cream, salsa, or jalapeños.
  • For a vegan option, substitute cheese with a plant-based alternative.
