Ingredients

Blackberry Jam

Sandwich

  • 8 slices sourdough bread
  • 8 slices provolone cheese
  • 2 ounces goat cheese (crumbled)
  • 1 cup shredded mozzarella
  • 6 tablespoons butter (softened)

Instructions

  1. Make the jam: In a small saucepan, combine the blackberries, sugar, rosemary, lemon juice, and salt. Cook over medium heat until the mixture starts to bubble, then reduce to a gentle simmer.
  2. Simmer and thicken: Mash some of the berries with the back of a spoon or fork to release their juices. Continue simmering for 10 to 15 minutes, stirring often, until the mixture thickens to a jam-like consistency.
  3. Cool the jam: Remove the saucepan from heat and let the jam cool completely; it will continue to thicken as it rests.
  4. Prepare the bread: Lay out all 8 slices of sourdough bread. Spread softened butter on one side of each slice; this side will face the skillet during grilling. Flip the slices so the unbuttered sides face up.
  5. Assemble the sandwiches: On 4 slices of bread, layer 2 slices of provolone cheese, then spoon a thin layer of the cooled blackberry jam on top. Sprinkle crumbled goat cheese evenly over the jam, then add shredded mozzarella. Top each with the remaining bread slices, buttered side facing out.
  6. Grill the sandwiches: Heat a large skillet over medium-low heat. Place the sandwiches in the skillet and cook for 3 to 4 minutes per side, or until the bread is golden brown and the cheese is melted inside.
