Seasoning Blend

  • 1-1/4 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground coriander
  • 1/16 teaspoon red pepper flakes (optional, see note 3)

Instructions

  1. Consider Options: Decide on your preferred cooking method: stovetop pan for breasts, grilling for thighs or breasts, or baking whole thighs.
  2. Prepare to Bake Thighs: If baking, preheat your oven to 425°F (218°C). Line a large sheet pan with foil for easy cleanup.
  3. Make Seasoning Mix: In a small bowl, combine chili powder, ground cumin, garlic powder, paprika, ground coriander, and red pepper flakes if using. Add about 1 teaspoon salt and 3/4 teaspoon pepper, then whisk well to blend all seasonings.
  4. Rub Mix on Chicken: Pat chicken dry using paper towels. Rub the entire seasoning mix evenly all over each piece of chicken with your hands to ensure full coverage.
  5. Bake Thighs: Lay the chicken thighs flat on the prepared pan, spacing them apart to ensure even cooking. Bake for 15 minutes at 425°F.
  6. Broil Thighs: After baking, move the oven rack to approximately 8 inches from the broiler element and switch the oven to broil. Carryover heat will bring it to the safe 165°F (74°C).
