Ingredients
Chicken
- 1 pound boneless, skinless chicken thighs (or breasts—see note 1)
- 4 teaspoons olive oil
- 2 teaspoons balsamic vinegar
- Salt and pepper, to taste
Seasoning Blend
- 1-1/4 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon ground coriander
- 1/16 teaspoon red pepper flakes (optional, see note 3)
Instructions
- Consider Options: Decide on your preferred cooking method: stovetop pan for breasts, grilling for thighs or breasts, or baking whole thighs.
- Prepare to Bake Thighs: If baking, preheat your oven to 425°F (218°C). Line a large sheet pan with foil for easy cleanup.
- Make Seasoning Mix: In a small bowl, combine chili powder, ground cumin, garlic powder, paprika, ground coriander, and red pepper flakes if using. Add about 1 teaspoon salt and 3/4 teaspoon pepper, then whisk well to blend all seasonings.
- Rub Mix on Chicken: Pat chicken dry using paper towels. Rub the entire seasoning mix evenly all over each piece of chicken with your hands to ensure full coverage.
- Bake Thighs: Lay the chicken thighs flat on the prepared pan, spacing them apart to ensure even cooking. Bake for 15 minutes at 425°F.
- Broil Thighs: After baking, move the oven rack to approximately 8 inches from the broiler element and switch the oven to broil. Place the pan back in the oven immediately and broil for 7 to 10 minutes, or until a nice blackened crust forms and the internal temperature reaches 160°F (71°C). Carryover heat will bring it to the safe 165°F (74°C).
- Rest the Chicken: Remove the pan from the oven and let the chicken rest uncovered for 5 minutes to retain juices.
- Slice and Serve: Transfer the chicken to a cutting board, dice or thinly slice, and taste. Add a pinch more salt if needed. Serve immediately and enjoy your flavorful blackened chicken.
Notes
- Note 1: For pan-cooking breasts, use moderate heat and cook breasts thoroughly until internal temperature reaches 165°F.
- Note 2: To grill thighs or breasts, preheat the grill to medium-high and cook the chicken, turning occasionally, until nicely blackened and cooked through.
- Note 3: Red pepper flakes can be omitted for a milder flavor or added sparingly for extra heat.
