This Breakfast Grilled Cheese recipe combines flavorful ground breakfast sausage, softly scrambled eggs, and melty Colby-Jack cheese between slices of buttery sourdough bread, making a hearty and satisfying morning meal. Quick and easy to prepare, it’s perfect for a comforting breakfast that can feed the whole family.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Sausage and Eggs

  • ½ pound ground breakfast sausage
  • 2 tablespoons unsalted butter (softened)
  • 6 large eggs (beaten)

Sandwich

  • 2 tablespoons unsalted butter (softened)
  • 8 slices sourdough bread
  • 8 slices Colby-Jack cheese

Instructions

  1. Cook the Sausage: In a large non-stick skillet, cook and crumble the ground breakfast sausage over medium heat until it is no longer pink. Transfer the cooked sausage to a paper towel-lined bowl to drain excess fat. Wipe out the skillet to prepare for the next step.
  2. Scramble the Eggs: Melt 2 tablespoons of softened butter in the cleaned skillet over medium-high heat. Pour in the beaten eggs and cook gently, stirring occasionally, until the eggs are softly scrambled and almost fully set. Remove the skillet from the heat.
  3. Combine Sausage and Eggs: Remove the paper towel lining from the sausage bowl. Add the scrambled eggs to the sausage and gently mix to combine the two ingredients evenly.
  4. Prepare Bread for Grilling: Heat the skillet again over medium heat. Butter one side of each slice of sourdough bread thoroughly to ensure a golden, crispy texture.
  5. Assemble the Sandwich: Place one slice of bread into the skillet, buttered side down. Layer one slice of Colby-Jack cheese on top, then spread about ½ cup of the sausage and egg mixture over the cheese. Add another slice of cheese on top and cover with a second slice of bread, buttered side facing up.
  6. Grill the Sandwich: Cook the sandwich for 3 to 4 minutes until the bottom bread is golden brown. Carefully flip the sandwich using a spatula and cook the other side until it is also golden brown and the cheese is fully melted.
  7. Serve: Remove the grilled sandwich from the skillet, cut it in half if desired, and serve immediately while warm and gooey.
  8. Repeat: Repeat the entire process with the remaining bread, cheese, and sausage-egg mixture until all sandwiches are prepared.

Notes

  • Use a non-stick skillet to prevent the sandwich from sticking and to achieve even browning.
  • Ensure the eggs are just softly scrambled to keep them moist inside the sandwich.
  • Butter both sides of the bread for the best crispy texture and rich flavor.
  • Serve immediately to enjoy the sandwich warm and the cheese melted perfectly.
  • For a spicier version, consider adding a pinch of cayenne pepper or hot sauce to the egg mixture.
