Sausage and Eggs
- ½ pound ground breakfast sausage
- 2 tablespoons unsalted butter (softened)
- 6 large eggs (beaten)

- 8 slices sourdough bread
- 8 slices Colby-Jack cheese
Instructions
- Cook the Sausage: In a large non-stick skillet, cook and crumble the ground breakfast sausage over medium heat until it is no longer pink. Transfer the cooked sausage to a paper towel-lined bowl to drain excess fat. Wipe out the skillet to prepare for the next step.
- Scramble the Eggs: Melt 2 tablespoons of softened butter in the cleaned skillet over medium-high heat. Pour in the beaten eggs and cook gently, stirring occasionally, until the eggs are softly scrambled and almost fully set. Remove the skillet from the heat.
- Combine Sausage and Eggs: Remove the paper towel lining from the sausage bowl. Add the scrambled eggs to the sausage and gently mix to combine the two ingredients evenly.
- Prepare Bread for Grilling: Heat the skillet again over medium heat. Butter one side of each slice of sourdough bread thoroughly to ensure a golden, crispy texture.
- Assemble the Sandwich: Place one slice of bread into the skillet, buttered side down. Layer one slice of Colby-Jack cheese on top, then spread about ½ cup of the sausage and egg mixture over the cheese. Add another slice of cheese on top and cover with a second slice of bread, buttered side facing up.
- Grill the Sandwich: Cook the sandwich for 3 to 4 minutes until the bottom bread is golden brown. Carefully flip the sandwich using a spatula and cook the other side until it is also golden brown and the cheese is fully melted.
- Serve: Remove the grilled sandwich from the skillet, cut it in half if desired, and serve immediately while warm and gooey.
- Repeat: Repeat the entire process with the remaining bread, cheese, and sausage-egg mixture until all sandwiches are prepared.
