This Brioche French Toast recipe transforms rich, buttery brioche bread into a decadent breakfast treat. Soaked in a fragrant mixture of eggs, half & half, cinnamon, and vanilla, then griddled to golden perfection, it offers a tender, custardy interior with a lightly crisp exterior. Perfect for a weekend brunch served with maple syrup, fruit, and butter.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Bread

  • 1 (16 oz.) loaf brioche bread, sliced into 1-inch slices

Custard Mixture

  • 2 large eggs
  • 1 large egg yolk
  • ⅔ cup half & half
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon vanilla extract
  • ⅛ teaspoon salt

For Serving

  • Salted butter
  • Maple syrup
  • Fruit of choice

Instructions

  1. Preheat Griddle: Set your griddle to 275°F to gently warm it, ensuring even cooking of the French toast.
  2. Prepare Egg Mixture: In a medium bowl, beat the eggs and egg yolk thoroughly. Add in the half & half, vanilla extract, granulated sugar, salt, and ground cinnamon. Whisk the mixture until all ingredients are fully combined.
  3. Soak Brioche Slices: Dip each slice of brioche bread into the egg mixture, placing one side down first and then flipping to coat both sides evenly. Repeat this process for all bread slices.
  4. Cook the French Toast: Place the soaked brioche slices onto the preheated griddle. Cook for 2 to 3 minutes on one side until golden brown, then carefully flip and cook the other side until equally browned and cooked through.
  5. Serve Warm: Remove the French toast from the griddle and serve immediately with salted butter, maple syrup, fresh fruit, or your preferred toppings.

Notes

  • Using brioche bread adds a rich and soft texture compared to regular bread.
  • Ensure the griddle isn’t too hot to avoid burning the French toast before it cooks through.
  • For extra flavor, add a pinch of nutmeg to the egg mixture.
  • French toast is best served immediately but can be kept warm in an oven set to low heat.
  • Leftover French toast can be reheated in a toaster or skillet for best texture.
