A refreshing and crunchy broccoli apple salad combining fresh broccoli florets, crisp apples, and a tangy yogurt mayonnaise dressing, perfect for a healthy side dish or light lunch.

  • Total Time: 20 minutes
  • Yield: 6 servings

Ingredients

Salad Ingredients

  • 4 cups fresh broccoli florets (about 2 medium heads)
  • 1/2 cup shredded carrots
  • 1/4 cup diced red onion
  • 2 large gala apples, finely chopped
  • 1/2 cup pecans, coarsely chopped
  • 1/2 cup dried cranberries

Dressing Ingredients

  • 1/2 cup lite mayonnaise
  • 1/2 cup low fat Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Combine Salad Ingredients: In a large bowl, combine the fresh broccoli florets, shredded carrots, diced red onion, chopped apples, coarsely chopped pecans, and dried cranberries.
  2. Prepare the Dressing: In a separate bowl, whisk together the lite mayonnaise, low fat Greek yogurt, lemon juice, sugar, salt, and pepper until smooth and well combined.
  3. Toss the Salad with Dressing: Pour the dressing over the salad ingredients and toss gently to coat all the components evenly with the dressing.
  4. Chill Before Serving: Cover the salad and refrigerate until ready to serve, allowing flavors to meld and the salad to chill appropriately, about 20 minutes.

Notes

  • You can substitute pecans with walnuts or almonds for a different nutty flavor.
  • For a lower sugar version, reduce or omit the added sugar in the dressing.
  • Use Greek yogurt for added protein and creaminess while keeping the dressing light.
  • This salad is best served chilled and can be made a few hours ahead of time.
  • To keep apples from browning, toss them in a little lemon juice before adding to the salad.
