Instructions

  1. Preheat the Broiler: Position the oven rack in the top slot and preheat your broiler or grill on high to ensure it reaches the right temperature for broiling the feta and tomatoes.
  2. Simmer Garlic and Tomatoes: In a large skillet over low heat, combine olive oil, finely chopped garlic, and crushed red pepper flakes. Cook gently for about 2 minutes to infuse the oil and mellow the garlic’s flavor. Add the halved or quartered cherry tomatoes along with a pinch or two of kosher salt. Simmer for 3 to 4 minutes until the tomatoes soften and release their juices.
  3. Transfer to Casserole or Skillet: Pour the tomato and oil mixture into a casserole dish. Use a spoon to clear a space in the center of the mixture and place the two blocks of feta cheese there. If using an oven-safe skillet like cast iron, you can directly add the feta blocks into the skillet with the tomatoes, skipping the casserole dish.
  4. Broil the Dish: Place the pan under the preheated broiler for 3 to 4 minutes. Watch carefully as the feta softens and turns a golden brown in places and some of the tomatoes blister. This step intensifies the flavors and adds a lovely texture contrast.
