Instructions
- Make the buffalo chicken mixture. In a medium bowl, combine the shredded chicken, buffalo sauce, Greek yogurt, garlic powder, dried dill, salt, and pepper. Stir until fully combined. Then fold in the shredded cheddar cheese until evenly distributed.
- Assemble your grilled cheese sandwiches. Spread a thin layer of butter on one side of each slice of sourdough bread. Reserve a small amount of butter for cooking. Place about half of the buffalo chicken mixture onto the non-buttered side of one slice of bread. Top with another slice of bread, ensuring the buttered side faces outward. Press down gently to compact the sandwich. Repeat with the remaining bread slices and chicken mixture.
- Cook the grilled cheese sandwiches. Heat a griddle or large skillet over medium heat and melt the reserved butter. Place the assembled sandwiches butter-side-down onto the skillet. Cook for 4-5 minutes until the bottom is golden and crispy. Carefully flip and cook the other side for 2-3 minutes until golden and the cheese is melted inside. For extra crispness, you can place a piece of parchment paper topped with a small pan or weight on top of the sandwiches while cooking.
- Serve and enjoy. Remove the grilled cheese sandwiches from the skillet, slice each in half, and serve hot. Optionally, accompany with blue cheese dressing, ranch, or extra buffalo sauce for dipping.
