Butter Rice Cakes are delightful, crispy-on-the-outside and soft-on-the-inside treats made with glutinous rice flour, butter, and a touch of vanilla. Baked to golden perfection in a spherical shell madeleine pan, these cakes offer a unique texture and rich buttery flavor, ideal for serving warm and fresh.

  • Total Time: 55 minutes
  • Yield: 9 servings

Ingredients

Main Ingredients

  • 1 egg
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 5/6 cup whole milk
  • 2 tbsp unsalted butter
  • 1 1/2 cups glutinous rice flour

Instructions

  1. Melt Butter in Milk: In a small pan, add the whole milk and unsalted butter. Heat on medium heat just until the butter is melted. Turn off the heat and let the mixture cool until it is warm to the touch.
  2. Prepare the Oven and Pan: Preheat the oven to 355℉ (180℃). Grease the cavities of a metal spherical shell madeleine pan thoroughly with butter to prevent sticking.
  3. Mix Wet Ingredients: In a large bowl, combine the egg, granulated sugar, salt, and vanilla extract. Whisk vigorously until the sugar is fully dissolved and the mixture is smooth.
  4. Add Butter Milk Mixture: Pour the warm milk and melted butter mixture into the egg mixture and whisk until well combined.
  5. Incorporate Rice Flour: Gradually add the glutinous rice flour to the wet ingredients while whisking until the batter is smooth and well incorporated.
  6. Strain the Batter: Pass the batter through a fine sieve or strainer to remove any lumps, ensuring a silky texture.
  7. Fill the Pan: Pour the batter into the prepared pan cavities, filling each about 80-90% full to allow space for rising.
  8. Bake: Place the pan in the preheated oven and bake for 35-40 minutes, or until the tops of the rice cakes turn a beautiful golden brown color.
  9. Cool and Serve: Immediately remove the butter rice cakes from the pan and transfer them to a cooling rack. Serve warm for the best experience, as the cakes are crisp outside and tender inside. The crispness will diminish as they cool.

Notes

  • Using glutinous rice flour gives the cakes their signature chewy and moist texture.
  • Make sure to grease the pan cavities well to avoid sticking and ensure easy removal.
  • The cakes are best enjoyed fresh and warm to retain their crispy exterior.
  • Straining the batter helps get rid of lumps and results in a smoother texture.
  • The spherical shell madeleine pan creates a lovely round shape but other small molds may be substituted.
  • Do not overfill the pan cavities to prevent batter overflow during baking.
