Ingredients

For the Salad

  • 4 ears corn
  • 3 hearts romaine lettuce
  • 3 cups cubed brioche bread
  • 1/2 cup Parmesan cheese

For the Caesar Dressing

  • 1/3 cup mayonnaise
  • 4 anchovies
  • 2 cloves garlic, minced
  • 1 Tbsp. lemon juice
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. Dijon mustard
  • 1 1/2 tsp. Worcestershire sauce

Instructions

  1. Make the croutons: Spread the cubed brioche bread onto an ungreased baking sheet and bake at 250°F for 45-60 minutes until toasted and crisp. Remove from oven and set aside to cool.
  2. Make the Caesar dressing: In a mixing bowl, finely mash the anchovies with a fork. Whisk in red wine vinegar, minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, mayonnaise, and Parmesan cheese until smooth and well combined.
  3. Prepare the lettuce: Clean and chop the romaine lettuce into bite-sized pieces, then set aside.
  4. Char the corn: Place the ears of corn directly on medium heat grill grates, turning them occasionally to ensure all sides become slightly charred. Alternatively, hold each ear with tongs over a gas burner flame until evenly charred. Once charred, use a sharp knife to carefully shave the kernels off the cobs.
  5. Assemble the salad: In a large bowl, toss the chopped romaine with the prepared Caesar dressing until well coated. Fold in the charred corn kernels and brioche croutons gently. Finish by topping with additional Parmesan cheese and cracked black pepper if desired before serving.

Notes

  • For a vegetarian version, omit anchovies and substitute Worcestershire sauce with a vegetarian alternative.
  • Brioche bread makes croutons extra buttery and flavorful but any sturdy white bread can be used as a substitute.
