Ingredients
Pasta and Protein
- 8 ounces penne pasta (cooked to al dente)
- 2 cups cooked chicken (shredded or chopped)
Dressing and Cheese
- 1 cup Caesar salad dressing (homemade or store-bought)
- 1 cup Parmesan cheese (freshly shredded or grated)
Vegetables and Toppings
- 6 cups Romaine lettuce (chopped)
- 2 cups croutons
Instructions
- Cook the Pasta. Bring a large pot of salted water to a boil and cook the penne pasta until al dente, about 2 minutes less than package instructions. Drain the pasta and rinse it under cool water to stop the cooking process and cool it down. Set aside.
- Prepare Chicken. Use cooked chicken breast, either shredded or chopped into bite-sized pieces. If not already cooked, you can poach or roast the chicken ahead of time.
- Combine Ingredients. In a large mixing bowl, combine the cooked and cooled pasta, cooked chicken, chopped Romaine lettuce, and croutons.
- Add Dressing and Cheese. Pour 1 cup of Caesar salad dressing over the salad mixture. Add 1 cup of freshly shredded or grated Parmesan cheese. Toss everything gently until well coated and evenly distributed.
- Serve. Serve the Chicken Caesar Pasta Salad immediately for best texture, or refrigerate for up to 2 hours to allow flavors to meld. Toss again before serving if chilled.
Notes
- Use freshly grated Parmesan for the best flavor and texture.
- For a lighter salad, opt for a low-fat Caesar dressing or reduce the amount used.
- Make sure to cool the pasta thoroughly to prevent the lettuce from wilting.
- This salad can be refrigerated for up to 24 hours but is best enjoyed fresh.
- Add a squeeze of lemon juice for a fresh, tangy twist if desired.
