Ingredients

  • 1 cup Parmesan cheese (freshly shredded or grated)

  • 6 cups Romaine lettuce (chopped)

Instructions

  1. Cook the Pasta. Bring a large pot of salted water to a boil and cook the penne pasta until al dente, about 2 minutes less than package instructions. Drain the pasta and rinse it under cool water to stop the cooking process and cool it down. Set aside.
  2. Prepare Chicken. Use cooked chicken breast, either shredded or chopped into bite-sized pieces. If not already cooked, you can poach or roast the chicken ahead of time.
  3. Combine Ingredients. In a large mixing bowl, combine the cooked and cooled pasta, cooked chicken, chopped Romaine lettuce, and croutons.
  4. Add Dressing and Cheese. Pour 1 cup of Caesar salad dressing over the salad mixture. Add 1 cup of freshly shredded or grated Parmesan cheese. Toss everything gently until well coated and evenly distributed.
