Ingredients
Filling
- 3 cups shredded chicken
- 8 ounces fat free cream cheese (1 package)
- 1 cup shredded Mexican cheese blend
- ⅓ cup salsa
- 4 green onions, chopped
- ½ avocado, diced
- 2 tablespoons taco seasoning
- 1 teaspoon garlic
- 1 teaspoon garlic salt
- Salt and pepper, to taste
Tortillas
- 4 flour tortillas
Instructions
- Mix the Filling Ingredients: In a large bowl, combine the shredded chicken, fat free cream cheese, shredded Mexican cheese blend, salsa, and chopped green onions. Use a hand mixer to blend everything together until the mixture is creamy and well combined.
- Add Seasonings and Avocado: Add the diced avocado, taco seasoning, garlic, garlic salt, salt, and pepper to the mixture. Mix again at a slow speed to incorporate all ingredients evenly without mashing the avocado too much.
- Spread on Tortillas: Lay out each flour tortilla on a flat surface. Spread a thin and even layer of the chicken mixture over each tortilla, making sure to cover the entire surface.
- Roll and Slice: Roll up each tortilla tightly into a pinwheel shape. Use a sharp knife to cut the rolled tortillas into 1-inch bite-sized pieces.
- Chill and Serve: Place the roll-ups in the refrigerator and chill until ready to serve. Chilling helps them hold their shape and enhances the flavors.
Notes
- You can substitute the flour tortillas with whole wheat or low-carb tortillas for a healthier option.
- For added spice, consider mixing in some chopped jalapeños or hot sauce.
- These roll-ups can be made a few hours ahead, making them perfect for meal prep or entertaining.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- If you don’t have a hand mixer, you can mix the ingredients thoroughly with a spoon or spatula.
