Ingredients
Vegetables
- 2 large bell peppers (1 yellow & 1 red), cored and diced
- 1 medium onion, diced
- 4 garlic cloves, minced
- 1 lb. + 4 oz. grape tomatoes (2 10-oz. tubs), cut in half
- 1 eggplant (about 1 lb), diced
- 2 medium zucchini (about 1 lb), diced
Herbs and Spices
- 2 teaspoons thyme or herbs de Provence (or a bit of both)
- A few fresh basil leaves (left whole or chopped)
- Pinch of red pepper flakes, optional
- Mineral salt and pepper, to taste
Protein and Fats
- 2 cans (15 oz each) chickpeas, drained and rinsed, or 3 cups cooked garbanzo beans
- 1–2 tablespoons olive oil (or 1/4 cup water/broth for oil-free sauté)
Instructions
- Sauté Aromatics and Peppers: In a heavy-bottomed pot or Dutch oven, heat olive oil over medium heat. Add diced onion, minced garlic, and bell peppers. Sauté for 3 to 4 minutes until the vegetables soften and the onions turn translucent. If using water or broth instead of oil, add a bit more as needed to prevent sticking.
- Add Tomatoes: Mix in the halved grape tomatoes with the sautéed aromatics and peppers. Continue cooking for 5 minutes to allow the tomatoes to release their juices and meld flavors together.
- Simmer Vegetables: Add diced eggplant, zucchini, thyme or herbs de Provence, red pepper flakes (if using), and season everything with salt and pepper. Reduce heat to low and let the mixture simmer uncovered for 15 minutes, allowing the eggplant and zucchini to soften and absorb the flavors.
- Add Chickpeas and Continue Simmering: Stir in the drained and rinsed chickpeas. Cover the pot askew (partially covered) and simmer for 45 minutes to 1 hour. Stir occasionally to prevent sticking. Adjust simmer time depending on your preferred vegetable texture—shorter for firmer veggies, longer for softer vegetables and more flavorful juices.
- Finish and Serve: Before serving, stir in fresh basil leaves. Serve the chickpea ratatouille warm, cold, or at room temperature. It pairs excellently with gluten-free or artisan bread, or served over quinoa, farro, rice, or pasta for a complete meal.
