  • 1 large cucumber, peeled and chopped into a few pieces
  • 1 avocado
  • 1 jalapeno, trimmed and deseeded
  • 1/2 lemon, juiced

  • 1/2 tsp salt
  • 1/2 cup water (plus more as needed)

  • 1/2 cup chopped pineapple
  • 1/2 cup chopped cucumber

Instructions

  1. Blend Soup Ingredients: Combine the peeled and chopped cucumber, avocado flesh, trimmed and deseeded jalapeno, lemon juice, fresh cilantro, salt, and 1/2 cup of water into a blender. Blend until completely smooth, adding additional water as needed to reach the desired consistency. Taste and adjust the seasonings accordingly for a balanced flavor.
  2. Chill the Soup: Transfer the blended soup into a bowl or container and refrigerate for at least 1 hour, preferably 2 hours or more, to let the flavors meld and to serve it well chilled.
  3. Serve: Once chilled, ladle the soup into bowls and garnish with the chopped pineapple and chopped cucumber for a fresh, crunchy contrast to the creamy soup.

Notes

  • For a spicier soup, leave some seeds in the jalapeno or add more jalapeno according to taste.
