Ingredients

Beef Marinade

  • 200g (7 oz) steak (roughly 1 small steak), thinly sliced
  • 1 tsp oyster sauce
  • 1 tsp light oil
  • 1 tsp cornflour
  • 1/2 tbsp cold water

Stir Fry Sauce

  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 2 tsp tomato ketchup
  • 2 tbsp cold water

Vegetables and Serving

  • 2 large brown onions, peeled and sliced into wedges
  • 1 tbsp light oil
  • 2 spring onions, thinly sliced, to serve
  • Cooked jasmine rice, to serve

Instructions

  1. Marinate the Beef: Thinly slice the steak and combine it with 1 tsp of oyster sauce, 1 tsp of light oil, cornflour, and 1/2 tablespoon of cold water. Mix well and set aside to allow the beef to absorb the flavors.
  2. Prepare the Stir Fry Sauce: In a small bowl, combine the remaining 1 tablespoon of oyster sauce with 1 tablespoon of soy sauce, 2 teaspoons of tomato ketchup, and 2 tablespoons of cold water. Stir to blend and set aside.
  3. Cook the Onions: Peel the onions and slice them into wedges. Heat 1 tablespoon of light oil in a wok or large frying pan over medium-high heat. Add the onions and stir frequently, cooking for 5-6 minutes until they become slightly charred and mostly softened.
  4. Add and Cook the Beef: Push the onions to one side of the pan and add the marinated steak. Stir-fry the beef for about 2 minutes until it is just cooked through but still tender.
  5. Combine and Finish: Mix the onions and beef together in the pan. Pour in the prepared stir fry sauce and cook for another 1-2 minutes, stirring constantly until the sauce thickens to a sticky consistency that coats the meat and onions.
  6. Serve: Serve the hot beef and onion stir fry immediately over cooked jasmine rice, and garnish with the thinly sliced spring onions for a fresh, crisp finish.

Notes

  • You can use sirloin or rump steak for the best texture in this stir fry.
  • Adjust the oyster sauce and soy sauce quantities to taste if you prefer less saltiness.
  • The caramelized onions add sweetness and depth; do not rush this step for best results.
  • If you like spice, add a pinch of crushed chili flakes or fresh chilies.
