Shrimp and Marinade
- 2 lbs (907 g) raw jumbo shrimp, peeled and deveined (tails on)
- 2 tbsp (42 g) hot honey
- 1 tbsp (15 ml) avocado oil (or other high smoke point oil)
- 2½ tsp (6 g) chipotle chile powder
- ½ tsp (1 g) smoked paprika
- ½ tsp (1 g) ground cumin
- ½ tsp (3 g) sea salt
- 1 tbsp (15 ml) fresh lime juice
Garlic Lime Butter Sauce
- 8 tbsp (113 g) butter, melted
- 4 cloves garlic, grated to a paste
- 1 tbsp (15 ml) fresh lime juice
- Zest of one lime
- 1 tbsp (4 g) finely chopped fresh cilantro (or parsley)
Instructions
- Dry the shrimp: Pat the peeled and deveined shrimp dry with paper towels. Keep the tails on to make threading onto skewers and serving easier.
- Make the marinade: In a large bowl, whisk together hot honey, avocado oil, chipotle chile powder, smoked paprika, ground cumin, sea salt, and fresh lime juice until well combined.
- Marinate the shrimp: Add the shrimp to the marinade and toss until all are evenly coated. Cover and refrigerate for 20 minutes but do not marinate for longer to avoid texture changes from the lime juice.
- Prepare garlic lime butter sauce: While the shrimp marinates, whisk melted butter with grated garlic, lime juice, lime zest, and chopped cilantro in a small bowl. Set aside until serving.
- Soak skewers: If using bamboo skewers, soak them in water for at least 20 minutes to prevent burning while grilling.
- Thread shrimp onto skewers: Thread about 5 shrimp per skewer, keeping them facing the same direction for easy turning on the grill.
- Preheat the grill: Heat the grill to medium-high, approximately 350°F (175°C). Lightly oil the grill grates or use nonstick cooking spray.
- Grill the shrimp: Place shrimp skewers on the grill and cook for 2 to 3 minutes per side until shrimp are opaque and slightly charred. Remove immediately to keep shrimp juicy.
- Serve: Transfer skewers to a serving platter and serve immediately with the garlic lime butter sauce for dipping.
Notes
- Leaving the shrimp tails on makes them easier to handle and eat.
- Do not marinate shrimp for longer than 20 minutes to avoid a mushy texture caused by lime juice.
- Soaking bamboo skewers prevents them from burning on the grill.
- Use a high smoke point oil like avocado oil for the marinade to avoid burning at high grilling temperatures.
