  • Total Time: 6 hours 15 minutes
  • Yield: 8 servings

Ingredients

Chicken

  • pounds boneless skinless chicken breasts
  • Salt and pepper (to taste)

Marinade & Seasoning

  • 1 lime (zested and juiced)
  • 2 chipotle chilies in adobo (finely minced, or more to taste)
  • 1 tablespoon chili powder
  • 1½ teaspoons ground cumin
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • ½ cup water

For Serving

  • Tortillas (warmed)
  • Lettuce (shredded)
  • Cheddar cheese (shredded)
  • Tomatoes (chopped)
  • Sour cream (optional)

Instructions

  1. Prepare the chicken: Place the boneless skinless chicken breasts in the bottom of a slow cooker. Season them generously with salt and pepper to enhance the natural flavor of the chicken.
  2. Make the marinade: In a small bowl, mix together the lime zest and juice, finely minced chipotle chilies, chili powder, ground cumin, salt, pepper, paprika, garlic powder, onion powder, dried oregano, and water until well combined, creating a flavorful, spicy lime marinade.
  3. Combine chicken and marinade: Pour the prepared marinade over the seasoned chicken breasts in the slow cooker, ensuring the chicken is evenly coated for maximum flavor infusion.
  4. Slow cook the chicken: Cover the slow cooker and cook the chicken on the LOW setting for 6 to 8 hours, or on the HIGH setting for 3 to 4 hours. The chicken is done when it shreds easily with a fork and is fully cooked through.
  5. Shred the chicken: Carefully remove the cooked chicken breasts from the slow cooker. Using two forks, shred the chicken finely to prepare it for the tacos.
  6. Moisten the shredded chicken: Add some of the cooking liquid from the slow cooker back into the shredded chicken. This keeps it moist and flavorful, preventing it from drying out.
  7. Assemble the tacos: Warm the tortillas and fill them with the shredded chipotle lime chicken. Top with desired toppings such as shredded lettuce, cheddar cheese, chopped tomatoes, and sour cream if desired. Serve immediately for the best taste and texture.
