A refreshing and classic shrimp salad featuring tender boiled shrimp mixed with a creamy lemon-dill dressing, crisp celery, and red onion. Perfect for a light lunch or a flavorful appetizer served on butter lettuce leaves or on its own.

  • Total Time: 25 minutes
  • Yield: 6 servings

Ingredients

Shrimp Salad

  • 2 pounds shrimp (peeled and deveined)
  • 2 tablespoons finely chopped red onion
  • 1 rib celery, finely chopped

Dressing

  • 1 cup mayonnaise
  • 1 lemon (zested and juiced, about 1 tablespoon zest and 3 tablespoons juice)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • ¼ teaspoon kosher salt
  • Pinch freshly ground black pepper

Optional

  • Butter lettuce leaves for serving

Instructions

  1. Make the dressing. In a bowl, stir together the mayonnaise, lemon juice and zest, fresh dill, Dijon mustard, minced garlic, kosher salt, and freshly ground black pepper until well combined. Set aside for flavors to meld.
  2. Boil the shrimp. Bring a large pot of water to a rolling boil. Add the peeled and deveined shrimp to the boiling water and cook for 2 to 3 minutes until the shrimp turn pink and are just cooked through. Avoid overcooking to keep shrimp tender.
  3. Prepare an ice water bath. While the shrimp cook, fill a large bowl with ice and water. Once the shrimp are cooked, use a skimmer or slotted spoon to transfer the shrimp immediately to the ice water bath. Let them chill for about 3 minutes to stop cooking and retain firmness.
  4. Drain the shrimp. Remove the shrimp from the ice bath and drain well in a colander to remove excess water.
  5. Combine all ingredients. In a mixing bowl, gently toss together the cooled shrimp, finely chopped red onion, chopped celery, and the prepared dressing until everything is thoroughly coated and creamy.
  6. Serve. Serve the shrimp salad chilled on its own or alongside butter lettuce leaves for a fresh, crisp presentation.

Notes

  • Make sure to not overcook the shrimp; they should be just pink and opaque to maintain a tender texture.
  • The dressing can be made a few hours in advance to enhance the flavor.
  • For a lighter version, substitute mayonnaise with Greek yogurt.
  • Add a pinch of cayenne pepper or hot sauce if you prefer a spicy kick.
  • Serve the salad chilled for best taste and texture.
