Ingredients

  • 1 large Egg Yolk

  • 1/2 cup Salted Butter (softened)
  • 1/4 cup Honey

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or spray a regular-sized muffin tin with non-stick cooking spray to prepare it for baking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, sugar, honey, baking powder, and salt until evenly combined.
  3. Add Wet Ingredients: Pour in the melted butter, canola oil, milk, egg, and egg yolk. Mix gently until the batter is smooth and just combined. Avoid overmixing to keep the muffins tender and light.
  4. Let Batter Rest: Allow the batter to rest for 5 to 10 minutes. This gives the cornmeal time to absorb the liquids and soften, improving the texture of your muffins.
  5. Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full to leave room for rising.
  6. Bake: Place the muffin tin in the oven and bake for 17 to 20 minutes. Check doneness by inserting a toothpick into the center of a muffin – it should come out clean. For mini muffins, bake 10 to 12 minutes.
