Ingredients
Cookie Dough
- 1 box fudge brownie mix (18 oz.)
- 2 tablespoons all-purpose flour
- ¼ cup canola oil
- 2 large eggs
- 1 cup semi-sweet chocolate chips
Ganache Topping
- ¼ cup heavy cream
- ¼ cup candy-coated chocolate chips
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
- Mix Dry Ingredients: In a medium bowl, whisk together the fudge brownie mix and all-purpose flour until well combined.
- Add Wet Ingredients: Add canola oil and eggs to the dry mixture and stir until fully incorporated with no dry streaks remaining, forming a thick dough.
- Shape Cookies: Using a large cookie scoop, drop dough balls onto the lined baking sheets, spacing them about 1½ inches apart to allow room for spreading.
- Flatten Dough: Lightly press down on each dough ball with your hand to flatten slightly and remove the dome shape for even baking.
- Bake: Bake the cookies for 10-13 minutes, or until the edges are set but the centers remain soft.
- Cool Cookies: Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare Ganache: Place the semi-sweet chocolate chips and heavy cream in a microwave-safe bowl and microwave on high for 60 seconds.
- Whisk Ganache: Allow the mixture to sit for 2 minutes to melt fully, then whisk until smooth and glossy.
- Decorate Cookies: Spread the ganache evenly over the cooled cookies.
- Add Candy Topping: Immediately sprinkle candy-coated chocolate chips over the ganache to decorate before it sets.
- Set Ganache: Let the ganache firm up at room temperature before serving to ensure a perfect finish.
Notes
- Use parchment paper for easy removal and cleanup.
- Do not overbake to keep cookies fudgy and chewy.
- Allow ganache to set properly for the best texture.
- Store cookies in an airtight container at room temperature for up to 3 days.
- For a dairy-free option, substitute heavy cream with coconut cream and use dairy-free chocolate chips.
