Vegetables
- 1 medium white onion, chopped
- 2 celery sticks, chopped
- 2-3 cloves of garlic, minced
- 2 cups potatoes, roughly chopped (2 medium potatoes)
- 3 cups broccoli florets (including peeled and chopped stems)
- 1 cup frozen peas
- ½ cup parsley, chopped (or basil, mint, or cilantro)
Liquids and Seasonings
- 3-4 cups vegetable broth or water
- 1 cup full-fat coconut milk (canned, optional; or substitute with soy or oat cream)
- ½ tsp pink salt
- Freshly cracked black pepper, to taste
- Olive oil, for sautéing
Instructions
- Sauté Aromatics: Heat olive oil in a medium-sized pot over medium heat. Add chopped onion and celery, sautéing for 7-8 minutes until softened.
- Add Potatoes and Garlic: Stir in the roughly chopped potatoes and minced garlic. Cook for 2-3 minutes until the garlic is fragrant.
- Add Broth and Seasonings: Pour in the vegetable broth (or water), add pink salt and freshly cracked black pepper. Stir to combine and bring the mixture to a boil. Reduce to a medium simmer and cook for 10 minutes.
- Add Broccoli and Peas: Add the chopped broccoli to the pot and cook for an additional 7-10 minutes. Then add the frozen peas and simmer for another 3 minutes until all vegetables are tender.
- Add Herbs and Blend: Remove the pot from heat. Stir in chopped parsley (or your chosen herb). Use an immersion blender to blend the soup until smooth and creamy. If using a standard blender, allow the soup to cool slightly, blend in batches, and keep the lid vented.
- Adjust Consistency and Seasoning: Taste and adjust seasoning as needed. If the soup is too thick, add vegetable broth one cup at a time until desired consistency is reached.
- Serve: Optionally, serve with a squeeze of lemon juice for added brightness.
Notes
- You can substitute vegetable broth with water, but broth adds more flavor.
- Use other fresh herbs like basil, mint, or cilantro instead of parsley if preferred.
- For a creamier texture, full-fat coconut milk is recommended, but soy or oat cream can be used as dairy-free alternatives.
- Be cautious when blending hot soup to avoid splattering; vent the blender lid slightly.
- Lemon juice enhances the flavor but is optional.
