Ingredients

Liquids and Seasonings

  • 3-4 cups vegetable broth or water
  • 1 cup full-fat coconut milk (canned, optional; or substitute with soy or oat cream)
  • ½ tsp pink salt
  • Freshly cracked black pepper, to taste

Instructions

  1. Sauté Aromatics: Heat olive oil in a medium-sized pot over medium heat. Add chopped onion and celery, sautéing for 7-8 minutes until softened.
  2. Add Potatoes and Garlic: Stir in the roughly chopped potatoes and minced garlic. Cook for 2-3 minutes until the garlic is fragrant.
  3. Add Broth and Seasonings: Pour in the vegetable broth (or water), add pink salt and freshly cracked black pepper. Stir to combine and bring the mixture to a boil. Reduce to a medium simmer and cook for 10 minutes.
  4. Add Broccoli and Peas: Add the chopped broccoli to the pot and cook for an additional 7-10 minutes. Then add the frozen peas and simmer for another 3 minutes until all vegetables are tender.
  5. Add Herbs and Blend: Remove the pot from heat. Stir in chopped parsley (or your chosen herb). Use an immersion blender to blend the soup until smooth and creamy. If using a standard blender, allow the soup to cool slightly, blend in batches, and keep the lid vented.
