Chicken
- 3-4 large chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste

- 2 1/2 cups whole cherry tomatoes
- 1/3 cup chopped onions
- 4 garlic cloves, minced
- 6-7 fresh basil leaves, chopped
- 2 teaspoons Italian seasoning (optional)

- 1 8 oz container Kite Hill Cream Cheese (or regular cream cheese)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken and tomato mixture.
- Arrange Ingredients: Place the chicken breasts in a single line down the center of a large baking dish. Scatter the whole cherry tomatoes, chopped onions, minced garlic, Italian seasoning (if using), and salt and pepper evenly over and around the chicken. Drizzle the olive oil evenly on top of all the ingredients.
- Add Cream Cheese: Scoop out the cream cheese and place it in the middle of the baking dish, directly on top of the chicken and other ingredients. This will create a creamy sauce as it bakes.
- Bake: Put the baking dish in the preheated oven and bake for 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through. The time may vary depending on the thickness of the chicken breasts.
- Shred Chicken and Mix: Remove the baking dish from the oven. Using tongs, shred the chicken breasts in the dish. Then, use a spoon to mix the shredded chicken with the tomatoes, cream cheese, and other ingredients, creating a creamy, flavorful sauce.
- Serve: Serve the creamy chicken and tomato mixture hot. For a low-carb option, serve it over zucchini noodles (zoodles). Garnish with additional fresh basil leaves if desired.

- If you prefer a milder sauce, you can use regular cream cheese instead of Kite Hill (a dairy-free alternative).
