Ingredients
Meat and Seasonings
- 2 tbsp olive oil
- 1 lb beef stew meat
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp black ground pepper
Broth and Soup
- 1 can French onion soup (10.5 oz)
- 2 1/2 cups beef broth
Pasta and Dairy
- 3 cups egg noodles
- 1/2 cup sour cream
- 1/4 cup Parmesan cheese
Instructions
- Heat olive oil: Heat the olive oil in a large pot over medium-high heat to prepare for browning the beef.
- Season and brown beef: Add the beef stew meat to the pot, then season with garlic powder, onion powder, salt, and black pepper. Cook the meat for 4-5 minutes, stirring occasionally, until browned on all sides to develop flavor.
- Add liquids and noodles: Pour in the can of French onion soup and the beef broth, then add the egg noodles to the pot, stirring to combine all ingredients.
- Cook noodles and broth: Bring the mixture to a boil. Reduce heat slightly and cook for 7-10 minutes, stirring occasionally, until the noodles are tender and have absorbed most of the liquid.
- Finish with sour cream and cheese: Remove the pot from heat and stir in the sour cream until the noodles and beef are coated in a creamy sauce. Sprinkle with Parmesan cheese and serve warm.
Notes
- Use stew meat for tender chunks that hold up well during cooking.
- For extra flavor, you can add sautéed onions with the beef before adding liquids.
- Adjust seasoning to taste, especially salt and pepper, based on the saltiness of your broth and soup.
- If you prefer a thicker sauce, reduce the broth slightly or add more sour cream at the end.
- Serving suggestion: garnish with chopped fresh parsley for color and freshness.
