  • 3 medium-sized peaches (1.3 lbs, peeled and chopped)

Liquid and Sweetener

  • 1 15-oz can full-fat coconut milk
  • ¼ cup pure maple syrup

  • 1 Tbsp fresh lemon juice
  • ½ tsp sea salt

Instructions

  1. Prepare the peaches: Peel the peaches carefully, remove and discard the pits, then chop the peaches into chunks to prepare for blending.
  2. Blend the ingredients: Place the chopped peaches, coconut milk, maple syrup, lemon juice, and sea salt into a high-powered blender or food processor. Blend until the mixture is completely smooth and creamy.
  3. Adjust flavor: Taste the blended mixture and add more pure maple syrup or lemon juice to suit your personal preference for sweetness and tartness.
  4. Pour into molds and freeze: Pour the popsicle mixture into popsicle molds, filling them most of the way up. Secure the lids and insert the popsicle sticks. Freeze for 2 to 4 hours or until fully solid, depending on mold size and mixture temperature.
  5. Release and serve: To unmold the popsicles, let them thaw at room temperature for a few minutes or run warm water over the outside of the mold to loosen them, then gently pull them out.
  6. Store leftovers: Keep any remaining popsicles in the mold or transfer them to a large zip lock bag or airtight container. They can be stored in the freezer for up to 3 months, and for best preservation, wrap each popsicle individually in plastic wrap before freezing.
