Instructions
- Roast Tomatoes and Garlic: Preheat your oven and roast the tomato wedges and garlic bulbs according to the Herb Roasted Tomatoes recipe until tender and caramelized, about 30-40 minutes. This roasting process intensifies the flavors and softens the ingredients.
- Sauté Onions: Heat a tablespoon of extra virgin olive oil in a medium-sized dutch oven over medium-high heat. Add the chopped onions and sauté until translucent and fragrant, about 1-2 minutes. Remove from heat once done.
- Blend Ingredients: In a high-powered blender, combine the sautéed onions, roasted tomatoes, squeezed roasted garlic cloves (remove the insides from the bulb), tomato paste, and vegetable stock. Blend on high speed until fully smooth and creamy. Optionally, reserve some roasted tomato pieces for garnish.
- Cook the Soup: Pour the blended tomato mixture back into the dutch oven on medium-high heat. Stir in the heavy cream, sea salt, On Everything All-Purpose Blend, and smoked paprika until well combined.
- Simmer: Bring the soup to a boil for 1-2 minutes, then reduce heat to low and let it simmer gently for 5-6 minutes. This allows the flavors to meld and the soup to thicken slightly.
