This Creamy Sesame Chicken Ramen is a quick and flavorful dish perfect for busy weeknights. Featuring a rich, creamy sesame mayo broth combined with tender grilled chicken, soft-boiled eggs, and hearty ramen noodles, this recipe delivers a comforting and satisfying meal in just 15 minutes.

  • Total Time: 15 minutes
  • Yield: 2 servings

Ingredients

Ramen and Broth

  • 2 packages instant ramen (traditional, organic, or gluten-free)
  • 5 cups low-sodium chicken broth (or vegetable broth)

Seasoning Paste

  • 2 tablespoons mayonnaise
  • 2 cloves garlic (crushed)
  • 1½ tablespoons sesame oil
  • 1 tablespoon sriracha (or sambal olek)

Protein and Garnishes

  • 1 chicken breast (grilled or cooked, and chopped)
  • 2 large soft-boiled eggs (halved)
  • Scallions (thinly sliced)
  • Black sesame seeds (or shichimi togarashi)
  • ½ nori sheet (thinly sliced)

Instructions

  1. Boil chicken broth: Bring 5 cups of low-sodium chicken broth to a boil in a saucepan over medium-high heat, preparing the base for your ramen.
  2. Make seasoning paste: While the broth is heating, whisk together 2 tablespoons of mayonnaise, 2 crushed garlic cloves, 1½ tablespoons of sesame oil, and 1 tablespoon of sriracha (or sambal olek) in a small bowl until well combined.
  3. Cook the noodles in the broth: Once the broth reaches a boil, add the ramen noodles, including seasoning packets if desired for extra flavor. Boil the noodles for 2 minutes, then remove from heat.
  4. Thin the mayo mixture: Ladle about 2 tablespoons of the hot ramen broth into the mayo mixture. Whisk thoroughly to combine, then gradually add 2 to 4 more tablespoons of broth while whisking, until the mixture becomes smooth and pourable. Pour this mixture back into the pot with the noodles and broth, stirring gently.
  5. Serve and garnish: Divide the creamy ramen between two warmed bowls. Top each bowl with chopped grilled chicken, halved soft-boiled eggs, sliced scallions, black sesame seeds, and thinly sliced nori sheet as garnish to finish.

Notes

  • You can use either chicken broth or vegetable broth for a different flavor profile.
  • Including the seasoning packet from the ramen can add extra depth of flavor but can be skipped for lower sodium content.
  • Soft-boil the eggs by boiling them for 6 to 7 minutes, then quickly cooling in ice water.
  • Adjust the amount of sriracha or sambal to your preferred spice level.
  • This recipe is easily customizable with different proteins or vegetables.
