Ingredients

For the Avocado Jalapeno Sauce

  • 1 jalapeno (seeds and membranes removed)
  • 1 small avocado
  • ½ bunch fresh cilantro
  • 2 cloves garlic
  • ¼ cup sour cream
  • ½ lime (juiced)
  • ¼ teaspoon salt

For the Ground Turkey Filling

  • 1 pound ground turkey
  • 1½ teaspoons chili powder
  • 1 teaspoon ground cumin
  • ¾ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 tablespoon tomato paste
  • 2 tablespoons water
  • 3 tablespoons avocado oil

For Assembling the Tacos

  • 10 white corn tortillas
  • 8 ounces Monterey Jack cheese (grated)
  • 1 cup shredded lettuce
  • ½ cup diced tomato
  • ¼ cup sour cream

Instructions

  1. Prepare the sauce: Add jalapeno, avocado, cilantro, garlic, sour cream, lime juice, and salt to a blender or food processor. Blend until smooth and creamy. Store in the refrigerator until ready to serve.
  2. Preheat the oven: Set the oven to 450 degrees Fahrenheit to get ready for baking the tacos.
  3. Prepare baking sheet: Drizzle avocado oil over a large baking sheet and set aside to coat the surface.
  4. Cook the ground turkey: Place ground turkey in a medium skillet over medium heat. Break the meat apart as it cooks until it is fully browned and no longer pink. Add chili powder, cumin, salt, garlic powder, onion powder, and dried oregano. Stir well to combine all seasonings.
  5. Add tomato paste and water: Stir in the tomato paste and water, cooking for an additional minute to blend the flavors.
