Ingredients
Coating
- 1/4 cup flour
- 2 eggs, beaten
- 1/2 cup grated Parmesan cheese
- 1 cup panko bread crumbs
Vegetables
- 1 lb green and yellow beans
- Salt and pepper, to taste
Instructions
- Prepare the beans: Wash the green and yellow beans thoroughly, but do not dry them. Keeping them slightly wet will help the flour adhere better to the beans.
- Set up coating stations: Place the flour in a medium bowl. In a second medium bowl, add the beaten eggs. In a third medium bowl, combine the panko bread crumbs and grated Parmesan cheese.
- Coat the beans: Take one bean at a time and first dip it into the flour, ensuring it is fully coated. Then dip the bean into the beaten eggs. Finally, roll the bean in the Parmesan and panko bread crumb mixture until well covered. Repeat this process for all the beans.
- Arrange in air fryer: Place the coated beans in a single layer in the basket of the air fryer. You may need to cook them in two batches to avoid overcrowding and ensure even cooking.
- Air fry: Cook the beans at 380°F (193°C) for 10 minutes. Be sure to stir halfway through the cooking time to ensure all sides get crispy.
- Serve: Remove the beans from the air fryer and serve immediately. Optionally, pair with your favorite dipping sauce for extra flavor.
Notes
- Do not dry the beans completely after washing; a bit of moisture helps the coating stick better.
- Cooking in batches prevents overcrowding and promotes even crispiness.
- Use freshly grated Parmesan for the best flavor and texture.
- Serve immediately as the beans are crispiest right out of the air fryer.
- For added spice, sprinkle some chili flakes or paprika in the breadcrumb mixture.
