Instructions

  1. Prepare the Cheese Spread: In a small food processor, combine the cream cheese and Garlic and Herb Boursin. Puree until the mixture is smooth and well combined. Transfer the blended cheese mixture to a bowl and gently stir in 2 to 3 tablespoons of sliced fresh chives. Set this mixture aside.
  2. Slice the Vegetables: Slice the cucumber and radishes into very thin slices, approximately 1/8 inch thick. Using a sharp knife or mandoline will help achieve uniform thin slices for better texture and presentation.
  3. Prepare the Bread: Remove the crusts from the white and pumpernickel sandwich bread slices. Reserve crusts if desired for other uses, such as homemade croutons.
  4. Assemble the Sandwiches: Spread one side of each bread slice evenly with the prepared cheese and chive mixture. Layer the cucumber slices, radish slices, and a few watercress leaves on top of the spread. Cover with another slice of bread, spread side down, creating a sandwich.
