Dill Pickle Hummus is a zesty and creamy twist on classic hummus, featuring tangy dill pickles and fresh dill for a burst of bold flavor. This quick and easy recipe blends chickpeas with pickle juice, tahini, and garlic, making a perfect appetizer or snack that pairs wonderfully with fresh veggies, cucumber slices, or pita chips.

  • Total Time: 10 minutes
  • Yield: 8 servings

Ingredients

Hummus Ingredients

  • 1 15 ounce can chickpeas (drained and rinsed)
  • 3 tbsp tahini
  • 1/4 cup pickle juice
  • 1 cup dill pickles (chopped and divided)
  • 1 tbsp lemon juice
  • 2 tbsp fresh dill (chopped)
  • 1/2 tsp salt
  • 1 clove garlic (minced)
  • 1/4 cup olive oil

Instructions

  1. Prepare Chickpeas: For a smoother and creamier hummus, peel the chickpeas by gently squeezing each one between your fingers to remove the skins. This step helps improve the texture, though it is optional.
  2. Blend Ingredients: Add the peeled chickpeas to a high-powered blender or food processor along with the tahini, pickle juice, 3/4 cup of the chopped dill pickles, lemon juice, fresh dill, salt, minced garlic, and olive oil.
  3. Process to Smoothness: Pulse or blend the mixture until it becomes smooth and creamy. Stop occasionally to scrape down the sides to ensure even blending. If the hummus is too thick, add water one tablespoon at a time until you reach the desired consistency. Taste and adjust salt or lemon juice as needed.
  4. Garnish and Serve: Transfer the hummus to a serving dish. Garnish with the remaining 1/4 cup of chopped dill pickles and additional fresh dill. Serve with cucumber slices, chopped vegetables, or pita chips for dipping.

Notes

  • Peeling chickpeas improves hummus creaminess but is optional based on time and preference.
  • Adjust pickle juice quantity to control tanginess.
  • Use fresh dill for best flavor; dried dill can be substituted but in smaller quantity.
  • For a thinner texture, gradually add water instead of more olive oil.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
