Instructions
- Prepare the jar: Wash a wide-mouth pint mason jar and its lid thoroughly in hot soapy water. Rinse well and let them air dry completely to ensure cleanliness and prevent spoilage.
- Trim green beans: Snip the ends of the green beans so they fit comfortably inside the jar with about half an inch of space at the top to allow for brine expansion.
- Pack the jar: Place the green beans, sliced garlic, and fresh dill sprigs into the jar, pressing them in tightly to minimize air pockets.
- Make the brine: In a small saucepan, combine white vinegar, water, sugar, kosher salt, black peppercorns, and dried dill seed. Heat the mixture over medium heat, stirring occasionally until the sugar and salt dissolve and the brine comes to a boil, about 3-5 minutes.
- Pour brine: Carefully pour the hot brine into the jar over the green beans, filling to cover them completely. Gently tap the jar on the counter to release any trapped air bubbles.
- Adjust liquid level: If any green beans are exposed above the brine, add extra water to cover them. Discard any leftover brine.
- Seal and cool: Screw the lid onto the jar tightly and allow it to cool to room temperature for about an hour.
- Refrigerate: Place the jar in the refrigerator and let it chill for at least 24 hours to develop the best flavor. The pickled beans will keep refrigerated for up to one month.
