Green Beans
- 1 ½ pounds green beans, ends trimmed (about 4 cups)
Seasoning and Sauce
- 8 cloves garlic, minced (about 2 Tablespoons)
- Neutral oil, enough to submerge beans (about ½-1 inch in skillet)
- 1 Tablespoon chicken broth concentrate (like Better Than Bouillon or chicken bouillon powder)
- 2 Tablespoons water
- 1 Tablespoon chili crisp or chili oil (optional)
- Salt, to taste
Instructions
- Blanch the Green Beans (Optional): Boil water and blanch the green beans for 20 seconds, then immediately plunge them into an ice bath to stop cooking. Drain and pat the beans very dry to prevent oil splatter during frying.
- Prepare for Frying: Ensure the green beans are thoroughly dried. Heat neutral oil in a large skillet to about 350°F (enough to submerge the beans, about ½ to 1 inch deep). Test the oil temperature by dropping a bean; it should sizzle immediately.
- Fry the Green Beans: Add a handful of green beans to the hot oil and fry for 1-2 minutes until the skin wrinkles and blisters. Remove with a slotted spoon or tongs and place on a paper towel-lined plate. Repeat with the remaining beans.
- Sauté the Garlic and Add Sauce: Remove all but 1 tablespoon of the oil from the skillet and reduce the heat to medium. Add the minced garlic and sauté until fragrant, about 30 seconds.
- Combine Flavors: Stir in the chicken broth concentrate and water until well combined. Return the fried green beans to the skillet and toss for another 30 seconds to coat them in the flavorful sauce.
- Season and Serve: Season the green beans with salt to taste. Drizzle with 1 tablespoon chili crisp or chili oil if using. Serve immediately and enjoy your Din Tai Fung style green beans!
