Chicken Mixture
- 3 cups cooked and shredded or chopped chicken
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream or Greek yogurt
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ½ teaspoon garlic powder
Topping
- 1 sleeve (about 32) Ritz crackers, crushed lightly
- 1 ½ cups shredded cheddar cheese, divided (1 cup mixed in, ½ cup for topping)
Instructions
- Prepare the casserole dish: Spray a 7×11-inch casserole dish with non-stick cooking spray to prevent sticking and ease clean-up after baking.
- Select your chicken: Use any leftover chicken you prefer, such as grilled, baked, broiled, or a rotisserie chicken. Make sure it is cooked and shredded or chopped into bite-sized pieces.
- Mix ingredients: In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream (or Greek yogurt), crushed Ritz crackers, 1 cup of shredded cheddar cheese, salt, pepper, and garlic powder. Stir thoroughly until all ingredients are evenly mixed.
- Assemble and bake: Spoon the mixture into the prepared casserole dish, spreading it evenly. Bake in a preheated oven at 350°F (175°C) for 30 minutes.
- Add cheese topping: Remove the casserole from the oven and sprinkle the remaining ½ cup cheddar cheese evenly on top. Return the casserole to the oven and continue baking until the cheese is fully melted and bubbly, about 5 to 10 minutes.
- Cool and serve: Remove from the oven and allow the casserole to cool for 5 to 10 minutes before serving to let it set slightly and improve flavor melding.
