Ingredients

Spices & Marinade

  • ½ tsp turmeric
  • 1 tsp ground ginger and garlic
  • 1 tbsp mixed Kashmiri chilli powder
  • ½ tsp fine salt (to taste)

Main Ingredients

  • 1 kg prawns (cleaned and deveined)
  • 100 g butter
  • 1 onion (sliced)
  • 3 cloves garlic (minced)
  • 1 sprig curry leaves
  • 1 tsp fresh coriander (chopped)

Seasonings & Sauce

  • ¼ tsp garlic pepper seasoning
  • ¼ tsp garlic herb seasoning
  • ½ cup (125ml) water
  • 2 tbsp Nando’s lemon and herb sauce (or your favorite hot sauce)
  • ½ tsp chilli powder

Instructions

  1. Prepare the Prawns: Clean and devein the prawns thoroughly. Rinse them under cold water and then pat dry with paper towels to remove excess moisture.
  2. Marinate the Prawns: In a bowl, mix turmeric, ground ginger and garlic, Kashmiri chilli powder, and salt. Add the prawns to this spice mix and toss until they are evenly coated. Let them marinate for at least 30 minutes, or for best results, refrigerate overnight to absorb all the flavors.
  3. Sauté Onions: Melt the butter in a large pan over medium heat. Add the sliced onions and cook them gently until they become soft and translucent, releasing their sweetness.
  4. Add Aromatics: Stir in the minced garlic, fresh coriander, curry leaves, garlic herb seasoning, and garlic pepper seasoning into the butter and onions. Cook briefly to awaken their flavors.
  5. Cook the Prawns: Add the marinated prawns into the pan. Cook them gently over low heat, turning carefully to coat them thoroughly in the buttery aromatic mixture without breaking the prawns.
  6. Add Liquids and Simmer: Pour in the water, Nando’s lemon and herb sauce (or preferred hot sauce), and sprinkle the additional chilli powder. Allow the mixture to simmer for a few minutes until the prawns are fully cooked through and the sauce has thickened slightly.
  7. Garnish and Serve: Remove from heat, garnish the prawns with freshly chopped coriander, and serve immediately while hot to enjoy the full depth of flavors.
