Ingredients
Peanut Butter Buckeyes
- ½ cup unsalted butter (1 stick), softened
- ¾ cup creamy peanut butter (JIF-style)
- ½ teaspoon pure vanilla extract
- 2 ½ cups powdered sugar
- 10 ounces semi-sweet chocolate chips or candy melts
Instructions
- Prepare baking sheet: Line a large baking sheet with parchment paper and set aside to keep the buckeye balls from sticking.
- Make peanut butter dough: In a stand mixer or large bowl with a hand mixer, beat the softened butter, peanut butter, and vanilla extract together until smooth and creamy. Gradually add the powdered sugar, beating continuously until a thick dough forms.
- Form balls and chill: Using a 1-tablespoon scoop, portion out the dough and place on the prepared baking sheet. Roll each portion into smooth balls. Insert a toothpick about ¾ of the way into each ball. Cover the sheet and chill in the freezer for 30 minutes until the balls are firm.
- Melt the chocolate: Place chocolate chips in a microwave-safe cup. Microwave in 15-second increments, stirring between each until the chocolate is completely melted and smooth.
- Dip and coat: Dip each peanut butter ball mostly into the melted chocolate, leaving a small area at the top uncovered to resemble a buckeye. Let the excess chocolate drip off, then place the dipped ball back onto the parchment-lined sheet. Repeat for all balls.
- Finish and chill: Remove the toothpicks carefully, then use your fingers to gently press the hole closed. Chill the buckeye balls in the refrigerator until the chocolate hardens and sets.
- Serve and store: Enjoy these buckeye balls immediately or store them in an airtight container in the refrigerator for up to one week.

Notes
- For easier dipping, slightly warm the peanut butter balls if they are too firm after freezing.
- Use a toothpick to keep the balls steady while dipping in chocolate and to create the iconic buckeye look.
- Store the buckeye balls in a single layer to prevent sticking together.
- For candy melts, follow the package instructions for melting as they may differ slightly from chocolate chips.
- Make sure the peanut butter mixture is thick enough to hold its shape before scooping. Add a little more powdered sugar if too soft.
