Dough and Coating
- 20 Rhodes rolls (partially thawed)
- 6 tablespoons butter (melted)
- 3/4 cup light brown sugar (packed)
- 1 tablespoon cinnamon
- 1/8 teaspoon almond extract
Filling Drizzle
- 4 tablespoons butter (melted)
- 4 tablespoons light brown sugar (packed)
- 1 1/2 teaspoons cinnamon
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream (to drizzle overtop prior to baking)
Glaze
- 1/2 cup butter (softened)
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 3-5 tablespoons milk (adjust to desired consistency)
Instructions
- Prepare oven and pan: Move the oven rack to the center and preheat your oven to 350°F. Spray a 13×9 inch baking pan with nonstick cooking spray and set aside.
- Mix coating ingredients: In a gallon-sized Ziploc bag, add the brown sugar, cinnamon, and almond extract. Gently shake to combine evenly.
- Form dough balls: Cut each partially thawed Rhodes roll into quarters, then roll each piece into a ball. Keeping the rolls chilled prevents them from sticking together.
- Coat dough balls: Dip each dough ball into the melted butter then place into the gallon bag with the coating mixture. Seal the bag and shake gently to coat all dough balls evenly. Transfer coated dough balls to the prepared baking pan and spread into an even layer.
- Prepare filling drizzle: In a small bowl, whisk together melted butter, brown sugar, cinnamon, and vanilla extract. Drizzle this mixture evenly over the dough balls in the pan.
- Drizzle cream and let rise: Drizzle half a cup of heavy cream between the rows of dough balls. Cover the pan and let the dough rise for 30-45 minutes until puffed but not doubled in size. If oven isn’t preheated yet, do so now.
- Bake: Bake the uncovered pan in the preheated oven for 35-40 minutes until the tops are golden brown and the dough balls are fully baked through.
- Make glaze and finish: While baking, beat softened butter, powdered sugar, vanilla extract, and milk together until thick and smooth, similar to a thick glue consistency. Remove the baked cinnamon roll bites from the oven, let cool for 5 minutes, then drizzle the glaze on top. Serve warm and enjoy.
Notes
- Keeping the dough chilled makes it easier to handle and prevents sticking.
- Do not let the dough balls rise until doubled; a noticeable puff is sufficient before baking.
- You can adjust the milk in the glaze to achieve your preferred consistency, thinner for drizzling, thicker for spreading.
