Ingredients
Chicken Wings
- 2 pounds chicken wings (drumettes and flats separated and wing tips cut off)
- 2 teaspoons baking powder (aluminum-free)
- 2 teaspoons kosher salt
- 1 teaspoon onion powder
- ½ teaspoon ground black pepper
- ½ teaspoon smoked paprika
- ¼ teaspoon red pepper flakes (optional)
Garlic Butter Sauce
- ½ stick unsalted butter
- 2 tablespoons minced garlic
- 2 tablespoons chopped fresh parsley
Instructions
- Prepare Oven and Dry Wings: Preheat the oven to 425°F (220°C) and line a half-sheet size baking sheet with parchment paper. Pat the chicken wings dry thoroughly with paper towels to remove excess moisture for crispy wings.
- Season Wings: In a large bowl, toss the chicken wings with baking powder, kosher salt, onion powder, black pepper, smoked paprika, and red pepper flakes if using, ensuring even coating.
- Bake Wings: Arrange the wings spaced out on the prepared baking sheet. Bake for 30 minutes, then flip the wings and bake for an additional 10 minutes until crispy and cooked through.
- Make Garlic Butter Sauce: Melt the unsalted butter. In a small bowl, combine melted butter with minced garlic and chopped fresh parsley, mixing well until fully combined.
- Toss Wings in Sauce: Remove wings from the oven and immediately toss them in the garlic butter sauce in a large mixing bowl, ensuring all wings are coated evenly.
- Alternative Air Fryer Method: Dry the wings well with paper towels, then toss with 1 tablespoon aluminum-free baking powder and the remaining seasonings. Air fry at 400°F (200°C) for 20 minutes, shaking or flipping once or twice until wings are cooked through and crispy.
- Coat Air Fried Wings: Remove wings from the air fryer and toss them with the prepared garlic butter sauce before serving.
Notes
- Drying the wings thoroughly is key to achieving a crispy texture.
- Use aluminum-free baking powder to avoid any metallic taste.
- Red pepper flakes add a mild heat but can be omitted for a milder flavor.
- Both oven and air fryer methods deliver crispy wings; choose based on your preference and equipment.
- Serve immediately after tossing in the garlic butter sauce for best taste and texture.
