  • Total Time: 1 hour
  • Yield: 10 servings

Ingredients

To Blanch The Green Beans

  • 10 cups water
  • 1 Tablespoon salt
  • 20 ice cubes

To Make The Casserole

  • 2 Tablespoons salted butter, divided
  • 3 Tablespoons all-purpose flour
  • 1 ½ cups whole milk
  • 4 teaspoons Hidden Valley Original Ranch Salad Dressing and Seasoning Mix Packet
  • 1 teaspoon salt
  • ¼ teaspoons black pepper
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 ½ cups fresh mushrooms, sliced
  • 1 ¼ lbs fresh green beans, trimmed and cut
  • 1 cup fresh bread cubes

Instructions

  1. Preheat Oven and Prepare Ingredients: Preheat the oven to 350°F. Dice 1 cup of onions, cut the bread into bite-sized cubes, and trim and cut green beans into bite-size pieces. Rinse the green beans in cold water and set aside.
  2. Blanch the Green Beans: Fill a large pot with 10 cups water, bring to a boil, and season with 1 Tablespoon salt. Add green beans and cook for 5 minutes. Drain immediately and plunge into an ice bath for 2 minutes. Drain again and set aside.
  3. Make the White Sauce: In a saucepan over low heat, melt 1 ½ Tablespoons butter. Whisk in 3 Tablespoons flour and cook for 1-2 minutes while stirring constantly. Slowly whisk in 1 ½ cups whole milk and bring to a boil, whisking until thickened, about 1-2 minutes. Remove from heat, then whisk in 4 teaspoons Hidden Valley Ranch seasoning, 1 teaspoon salt, and ¼ teaspoon black pepper. Set sauce aside.
  4. Sauté Onions and Garlic: Melt remaining ½ Tablespoon butter in a large skillet. Add 1 cup diced onions and 2 cloves minced garlic. Sauté for 2-3 minutes until tender. Remove half of the onion and garlic mixture to a bowl and set aside.
  5. Sauté Mushrooms: To the skillet with remaining onion and garlic, add 1 ½ cups sliced mushrooms. Cook on medium heat for 5 minutes or until mushrooms are tender. Remove from heat.
  6. Combine Casserole Mixture: Add the blanched green beans and mushroom mixture to the saucepan with the white sauce. Stir well to combine all ingredients.
  7. Prepare Breadcrumb Topping: Mix the bread cubes with the reserved onion and garlic mixture until well combined. Set aside.
  8. Assemble the Casserole: Pour the green bean and sauce mixture into a 9×13 baking dish. Evenly sprinkle the bread and onion topping over the casserole.
  9. Bake: Bake uncovered in the preheated 350°F oven for about 30 minutes until the casserole is bubbly and the topping is golden and crisp.
  10. Rest and Serve: Remove casserole from oven and let rest for 5 minutes before serving for best flavor and texture.
