Ingredients
Wet Ingredients
- 2 large eggs
- 3 tablespoons vegetable oil or melted butter, plus more for the pan
- 250 grams (1 cup) pumpkin puree
- 300 ml (1¼ cups) warm milk
Dry Ingredients
- 3 tablespoons granulated sugar
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
- 150 grams (1¼ cups) all-purpose flour
Instructions
- Mix the Wet Ingredients: In a large bowl, whisk together the eggs, vegetable oil or melted butter, granulated sugar, cinnamon, nutmeg, and salt until smooth. Then, add the pumpkin puree and whisk again until fully incorporated.
- Add the Dry Ingredients: Gradually add the all-purpose flour to the pumpkin mixture and whisk well to eliminate all lumps. Slowly pour in half of the warm milk while whisking constantly to create a smooth batter.
- Adjust Consistency: Pour in the remaining milk and continue whisking until the batter is thin and pourable. If the batter seems too thick, add about ¼ cup more milk to reach the desired consistency. Let the batter rest for about 10 minutes to ensure tender crepes.
- Prepare the Cooking Surface: Lightly brush a non-stick skillet or crepe pan with oil or butter and heat it over medium heat until hot.
- Cook the Crepes: Using about half a ladle of batter per crepe, pour into the skillet while lifting and tilting the pan to swirl the batter into a thin, even circle. Cook for about 1 minute until the edges lightly brown and lift easily from the pan.
- Flip the Crepes: Carefully flip the crepe using a thin crepe spatula or your hands (be cautious as the pan is hot), and cook the other side for an additional 1 minute until cooked through.
- Repeat and Serve: Continue cooking the remaining batter, stacking the cooked crepes on a plate. This recipe yields about 8-10 crepes approximately 8 inches in diameter. Serve warm with your favorite toppings.
Notes
- For best results, let the batter rest to allow the flour to absorb the liquids fully and relax gluten development, resulting in tender crepes.
- If you prefer richer crepes, substitute vegetable oil with melted butter in both the batter and for cooking.
- Use a non-stick skillet or a specialized crepe pan to make flipping and cooking easier.
- These crepes can be filled with sweet fillings like whipped cream, syrup, or fruit compote, or savory fillings if you omit or reduce the sugar and spices.
- Leftover crepes can be stored in the refrigerator for up to 2 days, separated by parchment paper to prevent sticking.
