Dressing Ingredients
- 1/3 cup extra-virgin olive oil
- 1/4 cup freshly-squeezed lemon juice
- 1 large clove garlic (pressed or minced)
- 1 teaspoon sea salt
- 1 teaspoon ground sumac
- Optional: 2-3 teaspoons honey to sweeten (if desired)
Instructions
- Make the lemon dressing: Vigorously whisk together the extra-virgin olive oil, freshly-squeezed lemon juice, pressed garlic, sea salt, ground sumac, and optional honey in a small bowl or shake them together in a mason jar for about 30 seconds until fully combined. Set the dressing aside to let the flavors meld.
- Prepare the salad: In a large mixing bowl, combine the chopped Romaine lettuce, thinly sliced cucumber, red onion, diced tomatoes, thinly sliced radishes, chopped fresh mint leaves, and half of the pita chips. Drizzle the lemon dressing evenly over the salad ingredients and toss gently but thoroughly until everything is well coated and evenly mixed.
- Serve: Immediately serve the salad garnished with the remaining pita chips on top along with an extra sprinkle of ground sumac and freshly-ground black pepper for a burst of flavor and added crunch.
