Instructions

- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined to ensure your bread will rise perfectly.
- Combine Wet Ingredients: In a large bowl, whisk the sugar, oil, and eggs until smooth. Stir in the drained crushed pineapple, sour cream, reserved pineapple juice, and vanilla extract until all ingredients are well incorporated.
- Mix Batter: Gradually add the dry ingredient mixture to the wet ingredients, mixing gently until just combined to avoid a dense texture.
- Pour and Bake: Transfer the batter evenly into the prepared loaf pan. Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean, indicating the bread is fully cooked.
- Cool the Bread: Allow the bread to cool in the pan for 15 minutes to set, then transfer it onto a wire rack to cool completely.
- Prepare Pineapple Glaze: Whisk together the powdered sugar, reserved pineapple juice, and vanilla extract until smooth and free of lumps to create a luscious glaze.
- Glaze the Bread: Pour the glaze evenly over the cooled loaf. Let the glaze set at room temperature before slicing to ensure a perfect finish.

- Use fresh or canned crushed pineapple for convenience; be sure to reserve the juice for the glaze and batter.
