Instructions
- Combine Salad Ingredients: In a large bowl, add the chopped romaine lettuce, thinly sliced red onion, halved tomatoes, diced cucumber, chopped green bell pepper, pitted Kalamata olives, and cubed feta cheese. Toss gently to mix all ingredients evenly.
- Prepare Dressing: In a small mixing bowl, whisk together the extra virgin olive oil, red wine vinegar, lemon juice, honey, dried oregano, Dijon mustard, kosher salt, and black pepper until fully combined. Alternatively, combine these ingredients in a jar with a tight-fitting lid and shake vigorously until the dressing emulsifies.
- Toss Salad with Dressing: Pour the prepared dressing over the salad and toss thoroughly to ensure all ingredients are coated evenly. Optionally, serve the dressing on the side for individual preference.
