Bruschetta Topping

Instructions
- Preheat the Grill: Start by preheating your grill to medium-high heat, approximately 400°F (200°C). Clean and oil the grates well to prevent the chicken from sticking during cooking.
- Prepare the Chicken: Pound each chicken breast to an even thickness of about 1 inch to ensure uniform cooking. Set the chicken aside.
- Season the Chicken: In a large bowl, mix together olive oil, Italian seasoning, salt, and black pepper. Add the chicken breasts and toss to coat them evenly with the seasoning mixture.
- Grill the Chicken: Place the seasoned chicken breasts on the preheated grill. Cook for 6-8 minutes on one side, then flip and grill for another 6-8 minutes or until the internal temperature reaches 165°F (75°C), indicating the chicken is cooked through.
- Prepare the Bruschetta Topping: While the chicken is grilling, combine diced Roma tomatoes, fresh lemon juice, chopped basil, and salt and pepper in a bowl. Mix gently and let the mixture marinate.
- Melt the Cheese: Once the chicken is fully cooked and has appealing grill marks, top each breast with a slice of mozzarella cheese. Close the grill lid and cook for an additional 1-2 minutes, allowing the cheese to melt.
- Rest the Chicken: Remove the chicken from the grill and let it rest for a few minutes to allow the juices to redistribute and keep the meat moist.
- Top and Serve: Spoon the fresh tomato-basil bruschetta mixture generously over each chicken breast. Garnish with additional fresh basil leaves if desired, and serve hot.
