A vibrant and zesty Grilled Pineapple Salsa that combines the smoky sweetness of grilled pineapple with fresh cilantro, ginger, jalapeno, and tangy lime for a refreshing topping or dip. Perfect for adding a tropical twist to your meals or as a colorful appetizer.

  • Total Time: 25 minutes
  • Yield: 16 servings

Ingredients

Fruits and Vegetables

  • 1 pineapple (cored and cut into rings; alternatively, 2 20-ounce cans of sliced pineapple, drained)
  • 1/4 cup chopped fresh cilantro
  • 2 inch piece of fresh ginger (grated)
  • 2 limes (zest and juice)
  • 3 jalapenos (seeded and diced)
  • 1 medium red onion (diced)

Seasonings

  • Pink salt (to taste)
  • Freshly cracked black pepper (to taste)

Instructions

  1. Preheat Grill: Preheat a grill pan or outdoor grill over high heat to ensure it is hot enough to create good grill marks and char on the pineapple slices.
  2. Grill Pineapple: Lightly rub the grill surface with oil to prevent sticking. Place pineapple rings on the grill and cook each side for 3 to 5 minutes, or until dark grill marks appear, providing a smoky flavor and caramelization.
  3. Prepare Salsa: Roughly chop the grilled pineapple into bite-sized pieces and add to a mixing bowl along with the chopped cilantro, grated ginger, lime zest, lime juice, diced jalapenos, and diced red onion.
  4. Season: Add pink salt and freshly cracked black pepper to taste. Mix everything thoroughly to combine the flavors well. Adjust seasoning if necessary before serving.

Notes

  • For a milder salsa, remove all seeds from the jalapenos; for more heat, leave some seeds in.
  • If fresh pineapple isn’t available, canned pineapple rings drained well can be used as a substitute.
  • This salsa can be served with grilled meats, tacos, or as a refreshing dip with tortilla chips.
  • Make it ahead of time to allow flavors to meld, but add fresh lime juice just before serving to keep it bright.
