Instructions
- Heat oil: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat to prepare for cooking the beef and vegetables.
- Cook beef and veggies: Add ground beef, chopped garlic, chopped onion, frozen peas, frozen corn, frozen carrots, powdered ginger, salt, and pepper to the skillet. Cook for 6-8 minutes, breaking up the meat as you stir, until the beef reaches 160°F and vegetables are tender.
- Drain beef: Drain excess fat from the cooked ground beef mixture and transfer it to a plate to set aside.
- Scramble eggs: Return the skillet to the heat and add the remaining 1 tablespoon vegetable oil. Pour in the beaten eggs and cook, stirring occasionally, until fully scrambled and cooked through.
- Combine ingredients: Push the scrambled eggs to one side of the skillet. Add the cooked rice and reserved ground beef mixture to the skillet.
- Season fried rice: Drizzle soy sauce and sesame oil evenly over the rice and beef. Stir everything together and cook for an additional 2 minutes to allow flavors to meld and heat through.
- Garnish and serve: Remove the skillet from heat. Top the fried rice with sliced green onions before serving for a fresh and colorful finish.
- To freeze: Let the fried rice cool completely in the refrigerator. Transfer to a freezer-safe zip-top plastic bag and freeze for 3 to 4 months.
- To reheat: Thaw frozen fried rice overnight in the refrigerator. Add 1 tablespoon vegetable oil to a large skillet over medium-high heat. Add the fried rice and cook, stirring occasionally, until warmed through and beef reaches 160°F on a food thermometer.

- Make sure the ground beef is fully cooked to an internal temperature of 160°F to ensure food safety.
- Use day-old rice if possible to prevent the fried rice from becoming mushy.
- You can customize vegetables according to preference, adding bell peppers or mushrooms if desired.
