Ingredients
Meat and Vegetables
- 1 lb ground beef
- 2 cups green beans
- 1 cup onion, diced
- 1 cup mushrooms
- 3 tsp minced garlic
Liquids and Dairy
- 1/4 cup beef or chicken broth
- 1/3 cup sour cream
- 2 Tbsp cream cheese
- 2 cups Colby jack cheese, shredded (reduce to 1 cup for less cheesy option)
Seasonings
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 tsp Worcestershire sauce
- 1/8 tsp dried thyme
Instructions
- Brown the Ground Beef: Heat a cast-iron skillet over medium heat and cook the ground beef until browned, about 5 minutes. Remove the beef and drain excess grease, leaving 1 tablespoon of grease in the pan for sautéing the vegetables.
- Sauté Onions: In the same skillet, add the diced onions and cook over medium heat until they begin to soften, approximately 3 minutes.
- Add Mushrooms: Add the mushrooms to the skillet and cook for an additional 2 minutes until they soften.
- Cook Green Beans and Garlic: Stir in the green beans, minced garlic, and broth. Cook for 2-3 minutes until the green beans and other vegetables become tender.
- Incorporate Cream Cheese and Sour Cream: Reduce heat to medium-low and add the cream cheese, stirring until melted. Then mix in the sour cream until fully combined.
- Combine Beef and Seasonings: Return the browned beef to the pan. Add sea salt, ground black pepper, dried thyme, and Worcestershire sauce. Stir gently to combine all ingredients evenly.
- Add Cheese Topping: Sprinkle shredded Colby jack cheese evenly over the top of the mixture in the skillet.
- Broil or Melt the Cheese: Place the skillet under the oven broiler for 2 minutes or until the cheese is melted and browned. Alternatively, cover the skillet with a lid and cook on the stovetop for 3-4 minutes until the cheese melts (note that stovetop melting will not brown the cheese).
Notes
- To reduce cheesiness, cut shredded cheese quantity to 1 cup.
- Using a cast-iron skillet helps in even cooking and provides flavor depth.
- Broiling the cheese gives a nice crispy top; stovetop cooking simply melts the cheese without crispness.
- You can substitute fresh green beans with frozen trimmed green beans if fresh aren’t available.
- Worcestershire sauce adds umami; omit or replace for dietary preferences.
