Instructions
- Mix dry ingredients: Whisk together the oats, whole wheat flour, baking powder, cinnamon, and salt in a medium bowl until evenly combined.
- Combine wet ingredients: In a separate bowl, whisk the melted coconut oil or butter with the egg and vanilla extract until smooth. Stir in the agave syrup thoroughly to integrate the sweetness.
- Form dough: Add the dry ingredient mixture to the wet ingredients, stirring just until incorporated. Gently fold in the diced red apple pieces to distribute them evenly without overmixing.
- Chill dough: Cover the bowl and chill the cookie dough in the refrigerator for 30 minutes to help the cookies hold their shape during baking.
- Preheat oven and prepare baking sheet: Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper or a silicone baking mat for non-stick baking.
- Shape cookies: Using a spoon and spatula, drop the dough into 15 rounded scoops onto the prepared baking sheet, then flatten each slightly to encourage even baking.
