Instructions

- Cream butter and sugar: In a large mixing bowl, beat ½ cup of softened butter with 1 cup sugar until the mixture is light and fluffy, which will contribute to the muffins’ tender texture.
- Add eggs and vanilla: Beat in 2 eggs one at a time, ensuring each is fully incorporated before adding the next. Then mix in 2 teaspoons of vanilla extract to enhance the flavor.
- Combine dry ingredients: In a separate bowl, whisk together 2 cups flour, ½ teaspoon salt, and 2 teaspoons baking powder to evenly distribute the leavening agent and salt.
- Mix wet ingredients: Add the lemon juice and zest to ½ cup milk to infuse it with citrus flavor.

- Add hibiscus flowers: Fold in the soaked hibiscus flowers along with any remaining liquid from the steeping process to the batter, incorporating their floral flavor and moisture.
- Prepare muffin tin: Line a 12-cup standard muffin tin with cupcake liners and evenly distribute the batter among the cups.
